Roasted Veggie Sandwiches

Roasted Veggie Sandwiches
Lightly coat sliced red peppers, thinly sliced eggplant, red onion slices, thickly-cut tomatoes, garlic cloves (with skin on) and any other veggies your like in olive oil.
Roast at 400 degrees for about 30 minutes, flip halfway through.
Slice French bread in half and toast lightly.
Spread on goat cheese (I like the kind with herbs)
Pop the garlic out of the skins and spread on top of the goat cheese. Layer fresh basil leaves on top of this. Place roasted vegetables on top.
Pig out. But feel smug, because it's healthy.

Pat - Apple Cake

Apple Cake

The kids loved this one – Adam’s favorite

3 eggs

1 ¾ cp sugar

2 cp flour

1tsp salt

1 tsp soda

1-2 tsp cinnamon

¾ cp oil

3-4 apples, peeled & sliced

Cream eggs & sugar

Add dry goods except apples (it will look pretty solid)

Add oil

Fold in apples

13x9 greased pan

375 45 minutes

Cool & sprinkle with powdered sugar

Update!

At 3:30am this morning, John & Laurie Cunningham welcomed a baby boy! Liam Edward Thomas Cunningham is 5lbs, 13 oz and 19 1/4 inches.

Everyone is doing fine. They will go home on Friday.

FYI

A few of you asked me, so I am hoping you'll get the news this way...

This evening Laurie Cunningham's water broke. I am told she has checked into the hospital and contractions have begun. It is anticipated the little Sean & Adam will have a half brother or sister sometime late tonight or early tomorrow.

Here's wishing them an easy and speedy labor!

I had already compiled recipes from our household and from Pat. I will begin posting these recipes immediately. As I do, please feel free to send me any which you would like to contribute. You can do so by leaving them in the comments. The comments are moderated which means you will not see your comment appear right away. I will then post each recipe. If you have memories, personal comments or alterations for your recipes - please include them! I'm sure we would all love to know why that recipe is significant to you or you feel it can be improved.

One last thing - please don't feel you need to limit yourself to recipes which you feel have a nostalgic value to the immediate family. This is to share recipes new and old. In addition, don't feel you need to limit this page to recipes at all! If you have something you would like to share through the blog - I will post it. I look forward to seeing what comes from this.

Mixed Spice

Some of recipes Pat provided to me included a spice I had never heard of - Mixed Spice. After some research I found this recipe for Mixed Spice.

1 Tablespoon Cinnamon
1 Tablespoon Nutmeg
1 Tablespoon Allspice
2 Teaspoons Mace
1 Teaspoon Ground Cloves

Mix all the ingredients together and store in an airtight glass jar.
