Roasted Veggie Sandwiches

From Sarah

Roasted Veggie Sandwiches
Lightly coat sliced red peppers, thinly sliced eggplant, red onion slices, thickly-cut tomatoes, garlic cloves (with skin on) and any other veggies your like in olive oil.
Roast at 400 degrees for about 30 minutes, flip halfway through.
Slice French bread in half and toast lightly.
Spread on goat cheese (I like the kind with herbs)
Pop the garlic out of the skins and spread on top of the goat cheese. Layer fresh basil leaves on top of this. Place roasted vegetables on top.
Pig out. But feel smug, because it's healthy.

Desperately Seeking addys

I would like to have a list of family email addresses, physical addresses and phone numbers. Ours is terribly out of date. Please post your information in the comments - they are moderated so the comments will be emailed to me but not posted publicly.

If you think I'm going to harass you to contribute and to send me pictures you took at Rachel & Pete's wedding - you're probably right.

FYI

A few of you asked me, so I am hoping you'll get the news this way...

This evening Laurie Cunningham's water broke. I am told she has checked into the hospital and contractions have begun. It is anticipated the little Sean & Adam will have a half brother or sister sometime late tonight or early tomorrow.

Here's wishing them an easy and speedy labor!

How this thing works

Okay so far the people included in this venture are:
Pat
Sean & Molly
Sarah
Liz & John
Nancy & Clark
Al & Mary
Dave & Carol
Adam & Luke

I have asked Pat to provide Margaret's email so that she can participate if she likes. If there is anyone I have neglected - please forgive me and then either comment with the info or shoot me an email to my gmail account.

I had already compiled recipes from our household and from Pat. I will begin posting these recipes immediately. As I do, please feel free to send me any which you would like to contribute. You can do so by leaving them in the comments. The comments are moderated which means you will not see your comment appear right away. I will then post each recipe. If you have memories, personal comments or alterations for your recipes - please include them! I'm sure we would all love to know why that recipe is significant to you or you feel it can be improved.

One last thing - please don't feel you need to limit yourself to recipes which you feel have a nostalgic value to the immediate family. This is to share recipes new and old. In addition, don't feel you need to limit this page to recipes at all! If you have something you would like to share through the blog - I will post it. I look forward to seeing what comes from this.

Mixed Spice

Some of recipes Pat provided to me included a spice I had never heard of - Mixed Spice. After some research I found this recipe for Mixed Spice.

1 Tablespoon Cinnamon
1 Tablespoon Nutmeg
1 Tablespoon Allspice
2 Teaspoons Mace
1 Teaspoon Ground Cloves

Mix all the ingredients together and store in an airtight glass jar.

Welcome!

A short time ago I decided that as part of the gift to Rachel & Peter I was coordinating (given by Sean & me, Adam & Luke and Pat) we would make up a small homemade cookbook. This was to include favorite recipes by all of us.

As I began compiling the recipes Pat kept instant messaging me, "Is it too late?? I have one more!" Then, at lunch yesterday with Al & Mary and Nancy & Clark we were discussing the notion. More recipes were mentioned. As the book had not actually been printed yet we decided to hold off so we could get anyone who would like to be involved in on the fun.

So this blog has been created to share recipes - family recipes, fun recipes, recipes you love - anything you would like to share. Only recipes I have received prior to June 15th will be printed. If others would like to receive a copy I'm sure that can be arranged and I am happy to coordinate - We are guessing it will be around $25.

Much Love,
Molly
